Why We Choose Hereford Beef
We select Hereford beef due to its deep, rich flavor, which is greatly influenced by the region where it is bred—the Sandhills of Nebraska. Greater Omaha adheres to three fundamental principles to ensure exceptional taste: breed, feed, and age. The company conducts multiple quality checks before the meat is packaged to ensure the highest standards. The breed we select is rooted in the Hereford heritage phenotype, predominantly located in the United States, particularly the Midwestern region. The cattle are fed Midwest corn, and the company exclusively chooses high-quality A-maturity beef when preparing meat for their customers.
Our Pit-Master Process
When preparing our briskets, we follow several key steps that include cooking time, seasoning, resting, and slicing. Our briskets are slowly smoked for 18 to 20 hours. We generously apply a special blend of seasonings to each brisket. After removing them from the smoker, we allow the meat to rest and cool before slicing, letting the smoky flavor fully permeate the meat.
